Good morning, hello, happy Wednesday! It is a thunderous day and I just made Trader Joe’s hashbrowns. So crispy and golden on the outside, tender, warm, and hearty on the inside. A couple of days ago, I had aloo porota my mother packed for me from Bangladesh, which is flatbread stuffed with potato. Rich and delicate, topped with butter. Biryanis are the best with potatoes. They add a harder texture, and yet fill your mouth with gooey starchy goodness. Sometimes I think about aloo bhaji, weekend breakfast very thinly sliced fried potatoes cooked in Bengali spices. Of course, we can’t forget aloo bhorta - the Bangladeshi mashed potatoes cooked with mustard oil, ghee, and green chilis. What I’m trying to say is that potatoes are extremely versatile. They bring endless flavor and joy to our lives. Today, even though our featured poem is short, it captures the magic of potatoes and they beauty and happiness they provide.
